SUPER simple, once you’ve tried it you can take your inspiration from the weekly market treasures you find; summer is bursting with all kinds of peppers and this is a great way to put them to use.
3 colored bell peppers, large or 6 smaller ones
1 large onion
3 clove garlic
3.75 lb. tomatoes
Heat the oven to 350. Halve, seed, spray a cookie sheet or two with vegetable oil & roast all of the veggies in a single layer for 25 minutes.
3.5 oz. chipotle pepper in adobo
1 bunch cilantro, leaves
1.5 tbl. salt
