A few key members of the Pure Joy Catering Team took a super fun cooking lesson in Barcelona, Spain. We had a great apartment in the Gracia area through VRBO and on the last night of our trip Chef Nacho from Urban Chefs came and taught us Paella Marinera, Spanish Tortilla, Panellet Cookies, Salsa Romesco and Crema Catalana. It was one of the best parts of our whole Mediterranean adventure!

These cookies have always been a favorite of mine & I had no idea their base was Sweet Potatoes! This makes 12-14 cookies and you’ll need a kitchen scale.
150 g. roasted or boiled sweet potato
130 g. sugar
zest of one lemon
1 egg yolk
170 g. ground almonds
150 g. pine nuts or chopped blanched almonds
Peel & mash the sweet potato to make a puree. add the sugar and lemon zest. Add the egg yolk & ground almonds. Form balls and roll them in the pine nuts or chopped almond & place on a baking sheet. Bake at 350 for about 15 minutes.
