There’s a small humble restaurant in Rome that blew our minds. Cacio e Pepe on Via Giuseppe Avezzana, 11. Anthony Bourdain recommended it and we bee-lined there on a full day layover recently. It was so wonderful to eat authentic, delicious, perfect Roman handmade pasta dishes. The Cacio e Pepe is just that - cheese and pepper, and its phenomenal; sublime in its simplicity, as Da Vinci is quoted as saying "simplicity, the ultimate sophistication". The carbonera is also perfect and the house wine was quite drinkable. Go. Just go.
