Utterly Autumn Pure Joy Catering Salted Cinnamon Caramel Apples

scratch made with love = super yummy

These are really easy to do from scratch & very delicious - worth the bother. Makes 10-14 (depends on apple size ;)


I like to cut firm twigs to use as the sticks to make these extra darling. Using local organic apples & walnuts really makes these delicious & special.


10-14 local organic apple (it really makes such a huge difference)

2 cups sugar

1 cup brown sugar

2/3 cup light corn syrup

6 oz butter

8 oz cream

1 tbl. Vanilla extract

½ tsp. salt

1 tsp. cinnamon

Optional Garnish;

3 ½ cups Local organic walnuts, toasted, chopped 

Maldon flake salt


Must have:

Candy thermometer


Poke thick, firm twigs (angle cutting the end makes this easier) into the stem part of the apples.

Combine sugar, corn syrup, butter, cream, vanilla, salt and cinnamon. Cook in a heavy pan (larger than 3 quart size) over medium heat, stirring frequently until mixture reaches all the way to 240 degrees on candy thermometer. This takes a while, hang in there.


Quickly dip & roll apples, one at a time, in the caramel.  Let it drip, sprinkle lightly with Maldon flake salt then dip bottoms in chopped walnuts rolling to get it up the sides a bit.  Place apples upright on parchment lined cookie sheet or platter. If the caramel thickens before you’re done just reheat with a splash of cream.
